Correct servings per day/Correcta cantidad por porción al dia

This is a kind of complicated issue I have been dealing with all my life, never really paying attention to how many servings of fruits and vegetables and other food groups you actually HAVE to take per day to maintain optimal health. Now after reading a bunch of different sources, I can understand and will take action as soon as possible, hope you do too.


Here is the simplest way to visualize and understand this:
GRAINS, 6/day
VEGETABLES, 4/day
FRUITS, 4/day
DAIRY, 2/day
FATS & OILS, 2/day
MEATS, CHICKEN & FISH, 5oz/day
NUTS & LEGUMES, 3/day


What is a serving then? A serving size is said to be an example such as a hockey puck, a computer mouse or a baseball. This way you can picture better those servings explained above.


Now let's go eat properly and enjoy!

Una especie de tema complicado que he estado tratando toda mi vida, nunca he prestado atención a cuántas porciones de frutas y verduras y otros grupos de alimentos, hay que realmente tomar al día para mantener una salud óptima. Después de leer un montón de diferentes fuentes, puedo entender y tomar medidas lo antes posibleespero que tú también lo hagas.

Moroccan stewed chicken/Estofado de pollo marroqui

Happy New Year 2012! It has been awhile but I am back. This time with a delicious recipe by high demand. It is delicious, easy to make and the best part, quick.

What you will need:

- 1 lb of boneless, skinless chicken thighs (I also used breasts)
- 1 large zucchini cut into cubes (did not use this)
- 1 can of garbanzo beans
- 1 can of diced tomatoes
- 1 chopped fresh cilantro
- 1 tsp olive oil
- 1 chicken stock
- 1/2 tsp cayenne pepper
- 1 ground cumin
- 1/2 tsp ground cinnamon

Place oil in a large pan over medium-high heat. Season chicken with salt and black pepper and cook until browned. Add zucchini and continue cooking, stirring often. When zucchini pieces have browned lightly, add garbanzo beans, tomatoes, chicken stock, cayenne pepper, cumin and cinnamon. Turn heat to low and simmer until chicken is tender and cooked through, 10-15 minutes. Season to taste with more salt and pepper; garnish with chopped cilantro. I also made sushi white rice to go with it, you could also use couscous.

Feliz Año Nuevo 2012! Ha pasado algún tiempo pero ya estoy de vuelta. Esta vez con una deliciosa receta de alta demanda. Es delicioso y fácil de realizar y la mejor parte, rápido.

Qué necesitarás:

- 1 lbs de muslos de Pollo deshuesado, sin piel (también utilize pechugas)
- 1 calabacín grande cortado en cubos (no he usado esto)
- 1 lata de garbanzos
- 1 lata de tomates en trocitos
- 1 cilantro fresco picado
- 1 cucharadita de 
aceite de oliva 
- 1 lata de caldo de pollo
- 1/2 cucharadita de pimienta de Cayenne
- 1 cucharadita de comino molido
- 1/2 tsp de canela molida

Colocar aceite en una sartén grande a fuego medio-alto. Salzonear el pollo con sal y pimienta y cocer hasta que esté dorado. Añadir el calabacín y seguir cocinando, removiendo a menudo. Cuando los trozos de calabacín se hayan dorado ligeramente, agregar los garbanzos, tomates, caldo de pollo, pimienta de Cayenne, comino y canela. Seguir removiendo y bajar la temperatura y hervir hasta que el pollo es tierno y cocido, 10-15 minutos. Salzonear a tu gusto con más sal y pimienta; decorar con cilantro picado. También hice arroz blanco de sushi para acompañar, también se podría utilizar un cuscús.

Changes../Cambios..

Hello:
It has been awhile since the last post and I won't take too much of your time but I wanted to let you know that we got a puppy! YES, we adopted an American Pit Bull Terrier. It happened about 1 week ago, on our way after our son's soccer game. Long story short, the kids had an extremely powerful statement that left me breathless, we said yes. It is unbelievable, how God puts you in the right places at the right time. Bleu, was going to be put down the next day after being at the Shelter for a month. OMG, how in the world do we still buy puppies and not rescue them? He is only 10 months, what a sweet, funny and super loving dog. We hope to give him a wonderful place to live for many years to come, we enjoy his company and how well mannered he is at his young age. Thank you God for putting us in his life, I am coming to realize that you can never say never, hahaha, I tend to forget that one often?

Ha pasado tiempo desde el último escrito y quería haceros saber que tenemos un cachorro! Sí, hemos adoptado un American Pit Bull Terrier. Ocurrió alrededor de 1 semana atrás, en el camino después de partido de fútbol de nuestro hijo. Larga historia corta, los niños tuvieron una declaración muy fuerte que nos dejó sin aliento, y tuvimos que decir que sí. Es increíble, cómo Dios te pone en el lugar correcto en el momento adecuado. Bleu, que iba a ser sacrificado al día siguiente después de estar en el refugio por un mes. Dios mio, cómo en el mundo seguimos comprando cachorros y no aprovechamos a rescatar a los necesitados? Tiene tan sólo 10 meses, es un perro dulce, divertido y super amoroso. Esperamos darle un lugar maravilloso para vivir por muchos años, disfrutar de su compañía y lo bien educado que es a su corta edad! Gracias a Dios por habernos puesto en su vida, me estoy dando cuenta de que nunca se puede decir nunca jamas, jajaja, yo tiendo a olvidar este dicho a menudo?

- 2 glasses of water after waking up helps to activate the internal organs.
- 1 glass of water 30 minutes before a meal aids digestion.

ARE YOU PLANKING?

Oh my, this is hilarious. My friend Luigi introduced me to planking about a couple of weeks ago. His pictures are amazing, he's got talent... I then researched the topic and it's huge. Everybody is doing it... Is it a sport? a joke? a hobby? a game? here is the meaning and where it started. After reading this, I ask you to check out some amazing pictures and start trying this, you will get addicted...


"Not to be confused with plank (exercise). The lying down game is an activity, popular in Asia and Australia, consisting of lying face down in an unusual or incongruous location. The hands must touch the sides of the body, and having a photograph of the participant taken and posted on the internet is an integral part of the game. Players compete to find the most unusual and original location in which to play. The location should also be as public as possible, and as many people as possible should be involved. The lying down game was invented by Gary Clarkson and Christian Langdon in 1997. It first became popular in North East England, then all of Britain by the summer of 2009 reaching the point by late 2010 where it was described by Andrew Sullivan as "sweeping Britain". The game made news in September 2009, when seven doctors and nurses working at the Great Western Hospital in Swindon, England were suspended for playing the lying down game while on duty. The lying down game spread to the rest of the world where it has also been known as "playing dead", "à plat ventre", "extreme lying down" and "facedowns" and Planking (2011, Australia; New Zealand)".

Miss Terrariums/Srta. Terrarios

A new hobby? yes, more on my plate, why not? there is tons of time to do anything and everything if you know how to manage it... ask me for details, hahaha.


I came across this bog about a DIY Terrarium. I love succulents, succulents are beautiful, rough looking (though some grow flowers,) they remind me of NorCal, where I lived for 5 years, sniff, sniff. When you put them together in a vase, they become a story. Anyway, I decided then and there to make my own and now I am up to 3. I made one for my daughter, Olivia, another one as a house warming gift for my good friend, Juli and one, I had to keep. If you like to try new things, I highly recommend this tutorial. It's easy and fast and it makes a wonderful, unique gift. It took me about 30 minutes, the cost was about $25. Here is a photo of the one I gave to Juli, instructions below. Have fun!


SUPPLIES:
- Glass container (large enough to be able to move your hand when placing the succulents/cactus
- Rocks
- Horticultural Charcoal
- Cactus Soil
- Plants

CREATE:
- Lay rocks (2") smooth them evenly and then pour the charcoal (it helps sweeten the water and lessens the chance of bacteria)
- Pour in soil
- Plant your succulents, arrange them to your liking (bigger in the back) Gently pack soil around them

GIFT WRAP:
- I decided to add a personal message, wrote "friendship" on a stone and wrapped the vase with the instructions in how to care for your plant.

Un nuevo pasatiempo? sí, más en mi plato, ¿por qué no? hay toneladas de tiempo para hacer cualquier cosa y todo si sabes cómo manejarlo... preguntame por detalles, jajaja.


Me encontré con este blog acerca de un terrario. Me chifla este tipo de planta, las plantas suculentas son hermosas, de aspecto rudo (aunque algunas crecen flores), me recuerdan a NorCal, donde viví durante 5 años, sniff, sniff. Al ponerlas juntas en un florero, se convierten en una historia. Decidí entonces hacer el mío y ahora llevo 3. Hice uno para mi hija, Olivia, otro como regalo para mi buen amiga, Juli, y uno, que me quede para mi. Si te gusta probar cosas nuevas, te recomiendo este tutorial. Es fácil y rápido y hace un regalo maravilloso, único. Me tomó unos 30 minutos, el coste fue de alrededor de $25. Aquí está una foto de la que di a Juli, instrucciones de abajo. Que te diviertas!


SUMINISTROS:
- recipiente de vidrio (lo suficientemente grande como para poder mover la mano al poner el suculentas / Cactus
- Rocas
- Hortícolas carbón
- Tierra para plantar cactus
- Plantas


CREAR:
- Coloca las rocas (2 inches) lisas y uniformemente
- Pon el carbón de leña (que ayuda a endulzar el agua y disminuye la posibilidad de bacterias)
- Pon la tierra y planta las suculentas, ordenarlas a tu gusto (más grandes atrás)


ENVOLVER: 
- He decidido añadir un mensaje personal, escribí "Amistad" en una piedra y  envolví el jarrón con las instrucciones de cómo cuidar a tu planta.

Reminder/Recordatorio

First and foremost I want to remind you about this Saturday 26th, 2011; Earth Hour "Safe Energy & Reduce Light Pollution." Earth Hour is a worldwide initiative showing how individuals, communities, businesses and governments can address climate change if we resolve to work on it together. Earth Hour calls on all individuals to turn out their lights for one hour. If possible turn as many electrical devices as possible for one hour. The time we are asked to do this is 8:30 pm until 9:30 pm. Please be responsible and cooperate, little effort goes a long way.


On another note, I also wanted to make sure that if you missed the most amazing "supermoon" this past Saturday, you got to see it at least on a photo. Though this photo doesn't do justice to the real thing, I still believe is beautiful and hope you like it. It's been over 18 years since this last happened and it won't happen again until about 2018. Enjoy it!

En primer lugar quiero recordarte que este Sábado 26, 2011; Hora del Planeta "Conserva Energía y Reduce la Contaminación Lumínica." La Hora del Planeta es una iniciativa mundial que muestra cómo los individuos, comunidades, empresas y gobiernos pueden hacer frente al cambio climático, si estamos decididos a trabajar juntos. La hora del planeta hace un llamamiento a todas las personas que apaguen sus luces durante una hora. La hora que se nos pide para hacer esto es de 8:30 pm hasta las 9:30 pm. Por favor, se responsable y coopera, un pequeno esfuerzo va un largo camino.


También quería asegurarme de que si te perdiste la más increíble "Superluna;" el pasado sábado, puedas verlo por lo menos en una foto. Aunque esta foto no hace justicia a la realidad, todavía creo que es hermosa y espero que te guste. Han pasado 18 años desde que esto paso y no volverá a suceder hasta aproximadamente 2018. SMILE!

Today I have decided to consciously be happier than yesterday but less happier than tomorrow, because tomorrow I will be happier, hahaha.


Yes, I plan to tell myself everyday that being happy is my choice, nobody is going affect this state, no circumstances either; no matter how bad or negative things around me are. I am training my brain to be strong and to be able to block outside trash. I love the way being happy feels, it's contagious! imagine if we all tried as hard as we could to always have a positive attitude, to always be thankful... Did you know that one day of this, affects 10 people? and that @ the end of fours weeks you have affected 300 more. Oh wow, I love it! the world would be a HAPPY FACE, literally.


Here are a few things I do, to help myself keep on track:

  • Read only positive news, books, blogs... I know it's hard sometimes not to pay attention to the World news but honestly, there is nothing you can do for what is going on in Libya right now (for example) so what's the point?
  • "Tell it to myself," yes, as loud as possible. I'M HAPPY, HAPPIER, HAPPIEST.
  • Influencing other people also makes me happy, any shape or form, big or small.
  • I kiss my family everyday, tons of times and tell them how much I love them.
  • SMILE, smile and smile some more, as you know, it's free and easy to do, even when you are having a rough day.
What makes YOU happy? write it down, read it everyday, share it with the world.

Hoping to have flicked the switch today or have woken you up again to always be HAPPY. Life is short, take responsibility to live it to its full potential because it starts with how you really feel and that is HAPPY! right?

SUGAR, not as sweet as it sounds

My husband and I have been undergoing a very interesting experiment that I want to share with you. The results are amazing... He started at the beginning of the year, I started about one month ago. Just by omitting obvious and high percentages of sugar in our food intake (still eating the same and doing the same exercise routines,) he has lost 10 lbs, I have lost 4 lbs; also our BMI's are 12 (him) and 19 (me.) I am not writing this blog to make you change your lifestyle but to give you information about an ingredient that might be contributing (and not in a good way) to your weight, swing moods, asthma...


Though sugar has been around for about several thousands years, it is now more than ever, that we start understanding how bad this ingredient is for human health. Sugar is an unnatural chemical devastating to our health, made by industrial processes. It becomes unnatural after stripping away all the vitamins, proteins, minerals and other beneficial nutrients. Studies show that the average American ingests about 135 lbs of sugar per year. Is proven that sugar does more damage to the body than any poison or drug. Sugar contributes to tooth decay, diabetes, heart disease, depression, anxiety, can make it difficult to lose weight and even CANCER. Eating sugar won't cause cancer, it is the increase in insulin and growth hormones that will promote the growth of cancer cells. The main cause for premature aging is, excesses of sugar.


The guidelines say that a healthy intake of sugar is 32 grams (about 8 teaspoons) of our total calories for the day. I recommend you start looking at labels more often since there is sugar in everything, form Ketchup to cereal. Don't forget, we do want to get sugar from natural sources such as fruits and vegetables. A great, if not the best, substitute for sugar is AGAVE. In conclusion, sugar of any kind and form is BAD for our health, the results long term are catastrophic. By experience, I can assure you that, eliminating sugar from your diet can work wonders on your body, try it, I dare you (smiley face)

Bye 2009, Hello 2010!

Hola, Hello, Ciao, Bonjour, Hallo, こんにちは, Здравствулте!, YES, we have been all waiting, for one reason or another, for 2009 to end, well it's here, 2009 is almost over. Let's focus on the "good stuff" that happened in 2009, and I do not believe everything was bad; let's be happy for what it was, be thankful and GRATEFUL for everything that you have and did not, be positive inside and out, relax your mind and soul, everything will be better in 2010 and that is, if you want it to be.


"In Clover" is the next step, read about this lifestyle in one of my previous blogs; I know you can do it, if you always have this statement present you will be HAPPY, you will be Lucky, you will be Blessed, you will be Fortunate... all that and more. Your mind is an incredible tool to make things the way you want them to be, ASK, BELIEVE and RECEIVE. Don't loose track of what really is important, we tend to do so.


I have been thinking that I never wrote a blog about why I started writing blogs and the reason behind this decision was that I have always like to write since I was young, in fact, I own about 5 diaries... I also have a collection of poems/songs... I started this blog because I wanted to stop ripping pages from magazines about interesting topics, the file was getting too fat and at the end of the day it was an inconvenience to pull it out and flip through countless pages. This is a place where I write about things that we know but we tend to forget. It is convenient to be able to get tips, read about experiences and even personal struggles... all in one place. I really hope that I can inspire you to live a positive life, be open to change, remember that if we don't try different things, you are missing out in life.

Some materials that we can recycle are plastic, batteries, glass, paper, paint, print cartridges... There are many reasons why we should recycle, such examples are, conservation, energy saving, reduce pollution, landfill reduction.

  3. Recycling just one aluminum can saves enough energy to operate a TV for 3 hours

It is super important to recycle and anyone can do it, the best part, is that, every little bit you do will help tremendously in the long run. Try it, start with paper or plastic or both and take them to a recycling bin that you should already have in your home.

There is so much that YOU can do with very little effort and you will probably save yourself a lot of money while you are at it!
